Place one pie crust in an ungreased pie dish. In a medium bowl, mix the mushroom soup and milk. Stir in the turkey and mixed vegetables. Pour the mixture into the pie crust in the dish. Sweet Potato Hash 1 sweet potato, peeled & cut into small cubes 1/2 onion, chopped 1 small red pepper, chopped 1 tablespoon olive oil pinch of red pepper flakes salt and pepper to taste 1 small apple, cored & cut into small cubes 1 green onion, chopped Using a large skillet, heat 1 tablespoon oil. Start with the ingredients that will take the longest time to cook. Add the sweet potato first and fry it for 4-5 minutes. Next add the onions and red peppers, along with a pinch of red pepper flake, salt, and pepper. Cook an additional 2-3 minutes. Let the ingredients brown and stir constantly in the skillet. The sweet potatoes will take on a lightly brown color. Finally, add the chopped apple and green onion.

Vanilla cupcakes with cream cheese frosting

Makes 14 large cupcakes. Ingredients: 3/4 c. of butter, softened 1-2/3 c. of white sugar 2 large eggs 2-2/3 c. of all-purpose flour 1-1/2 tsps. of baking powder 1/4 tsp. of salt 3/4 cup + 2 tbsps. of skim milk 2 tsps. of vanilla extract In a bowl whisk together the flour, salt and baking powder. In another bowl, stir together the milk and vanilla extract. In a large bowl, beat the butter (with a wire whisk or a hand mixer) until light and fluffy. Add the sugar and continue beating until well combined. Add the eggs, one at a time, until well incorporated. Add the flour and milk in batches to the butter mixture, starting and ending with the flour. Spoon into paper-lined cupcake pans to about 3/4 full. Bake in a preheated 350oF oven for 35 to 40 minutes.
